JERUSALEM ARTICHOKE CHIPS

Jerusalem artichoke is a herbaceous plant with a taste very similar to artichoke, shaped like a knobbly tuber.
It can be cooked in various ways: stewed, sautéed, baked. Let's say it can be an excellent substitute for potatoes.
If you slice it thinly with a slicer and fry it, you will get crispy chips with a truly surprising taste.
You won't be able to do without it! Try it for yourself.

INGREDIENTS FOR 4 PEOPLE

  • 500 g Jerusalem artichokes
  • 500 ml peanut oil
  • salt to taste

PROCEDURE

  • Wash the Jerusalem artichokes, dry them thoroughly, and slice them into 1.5 mm thick slices.
  • Heat the oil to 170°C. If you don't have a kitchen thermometer, you can check that the temperature is correct by dipping a slice of Jerusalem artichoke into the oil; it should sizzle.
  • Fry the chips a few at a time and as soon as they turn slightly brown, remove them immediately and place them on paper towels.
  • Add salt to taste
