VELO COOKIES

Velo cookies are delicious, crunchy cookies, perfect for any occasion.
They are made with only egg whites, flour, almonds, and sugar.
They are baked in a single loaf, then sliced very thinly and returned to the oven to become crispy.

INGREDIENTS FOR 50 COOKIES

  • 100 g egg whites
  • 100 g sugar
  • 100 g of flour
  • 100 g of almonds
  • 1 teaspoon of lemon juice

PROCEDURE

  • Using an electric mixer, beat the egg whites with the lemon juice and sugar until stiff peaks form.
  • Add the whole almonds with a bottom-up motion to incorporate them into the beaten egg whites.
  • Place the mixture in a loaf pan lined with parchment paper and bake at 180°C for 25-30 minutes.
  • Remove from the oven, place on a wire rack, and leave to cool.
  • Slice the dough to make cookies 1.5 mm thick.
  • Place the cookies on a baking sheet and toast at 160°C for about 10 minutes, until crispy.
