Jerusalem artichoke is a herbaceous plant with a taste very similar to artichoke, shaped like a knobbly tuber.
It can be cooked in various ways: stewed, saut\u00e9ed, baked. Let's say it can be an excellent substitute for potatoes.
If you slice it thinly with a slicer and fry it, you will get crispy chips with a truly surprising taste.

    • Wash the Jerusalem artichokes, dry them thoroughly, and slice them into 1.5 mm thick slices.<\/li>
    • Heat the oil to 170\u00b0C. If you don't have a kitchen thermometer, you can check that the temperature is correct by dipping a slice of Jerusalem artichoke into the oil; it should sizzle.<\/li>
    • Fry the chips a few at a time and as soon as they turn slightly brown, remove them immediately and place them on paper towels.<\/li>
